About the Author

Dr. Marie Boyle earned her Bachelor of Arts in psychology from the University of Southern Maine and her Master of Science and Doctorate in nutrition from Florida State University. She is the author of PERSONAL NUTRITION and a collaborator on COMMUNITY NUTRITION IN ACTION: AN ENTREPRENEURIAL APPROACH. Dr. Boyle serves as a nutrition professor, leads the Food and Nutrition Department, and oversees the Graduate Program in Nutrition at the College of Saint Elizabeth in Morristown, New Jersey. Additionally, she delivers online distance learning courses in public health nutrition for the University of Massachusetts in Amherst. Her professional affiliations include membership in the American Public Health Association, the Academy of Nutrition and Dietetics, and the Society for Nutrition Education and Behavior, alongside her roles as a writer and critic for the latter two organizations. She co-wrote the present standpoint of the Academy of Nutrition and Dietetics on Food and Nutrition Safety in Developing Countries and acts as the editor-in-chief of the Journal of Hunger and Environmental Nutrition published by Taylor & Francis Publishers.

Dr. David H. Holben is an Associate Professor and the Director of the Didactic Program in Dietetics at Ohio University, Athens. He completed his Bachelor of Science in Dietetics at Indiana University of Pennsylvania, a dietetic internship at Detroit’s Harper Hospital, a Master of Arts in Food Science and Nutrition/Food Service Management at Wayne State University, and both a Master of Science and Doctorate in Human Nutrition from The Ohio State University. Dr. Holben’s research focuses on the food access of individuals and families, with a specific interest in health implications. He has authored numerous scholarly works related to food security and hunger and co-authored COMMUNITY NUTRITION IN ACTION: AN ENTREPRENEURIAL APPROACH. Dr. Holben instructs courses in Community Nutrition, Introductory and Advanced Nutrition, Medical Nutrition Therapy, and Research Methods. He actively participates in the American Dietetic Association at the national, state, and local levels.
